Originally, lemons were preserved for the same reason all things are preserved, to store and enjoy beyond the harvest season. Preserved lemons have long been a staple of Middle Eastern and North African, most notably in Israel, Iran, Turkey, and India. As most great traditions, the love of preserved lemons is becoming more prevalent worldwide. In this class all will make their own jar to take home (they also make a lovely gift) We will also enjoy a dish or two made with these great lemons.
